RECIPE CARD
Bread Puddin dessert can be served warm or cold with a scoop of vanilla ice-cream. It is a great way to use bread that has become slightly stale.
INGREDIENTS:
1 large Jamaican hard dough bread
3 cups whole milk or grace coconut milk
1 cup brown sugar
1/4 cup rum
1 large egg (beaten)
1/2 tsp grated nutmeg
1 tsp bedessee vanilla extract
1/2 tsp cinnamon powder
1/2 cup raisins
1/4 cup melted butter (optional)
INSTRUCTIONS:
- Preheat oven to 350 degrees Fahrenheit.
- Grease baking pan with 1 tsp melted butter.
- Remove crust from bread and cut into tiny pieces.
- Stir bread, sugar, nutmeg, cinnamon, and raisins in a large bowl.
- Pour milk into a separate bowl and add rum, beaten egg, and vanilla extract.
- Mix well together and then pour over the bread mixture.
- Allow to soak for 30 minutes and then add raisins.
- Stir well and then add to greased baking pan.
- Bake bread pudding for 40-60 minutes until the top is golden brown.
*Additionally, you can sprinkle a mixture of cinnamon and sugar over the top of the pudding for five minutes before removing it from the oven. This process allows the pudding top to be caramelized and sweetened.
